This fun, healthy kids snack can also be make ahead of time. Once the fruit salad is done, you can store it in the refrigerator. It is ready to be put into its cone whenever your kiddo is ready to eat.

Ingredients:
1 cup red or green apple, chopped with skin left on
1 cup seedless red grapes, cut in half
1/2 cup carrot, finely grated
1 cup celery, finely chopped
1/2 cup raisins or dried cranberries (craisins)
3 tablespoons vanilla yogurt
1 teaspoon lemon juice
1/4 C. chopped nuts
4 ice cream cones or bowls

Directions: 1. Combine fruits and vegetables in a bowl. Toss lightly with yogurt and lemon juice. Stir in nuts.

2. Chill fruit salad for 20 minutes and then scoop into cones or bowls to serve.

Ingredients:
1 banana, sliced and then frozen (unfrozen is also okay)
1 cup milk
1/2 tsp. vanilla extract
1-3 ice cubes
Green food coloring, as needed

Instructions: 1. Place milk, banana, ice cubes, and vanilla in your blender. Blend until smooth. Add green food coloring and blend to mix.

2. Serve with a fun straw!

Suggestion: Want to add a little fiber and protein to this? This fun, healthy kids snack also tastes great with a spoonful of peanut butter and a small scoop of raw oats added! Or add a handful of spinach for a natural green color... the kids won't even be able to taste it!


Crispy Kid-Friendly Veggie Quesadillas

For more adventurous kids you can increase the variety of the fillings by using chopped spinach, olives, peppers, or even thinly sliced apples for a sweet and salty treat. Some of the fun of this recipe is that kids can custom order their own food.

Ingredients:
1/3 C. grated zucchini
1/3 C. frozen sweet corn, thawed
1/4 C. chopped tomatoes
1/2 cup black beans, rinsed and drained
1 teaspoon olive oil
1 cup Monterrey Jack cheese
4 taco sized whole wheat flour tortillas

Directions: 1. In a heavy skillet heat the oil and saute the zucchini, corn, tomatoes, and black beans for 3-4 minutes.

2. Place one tortilla into a nonstick skillet on medium heat. Place 1/8 cup cheese and small amounts of vegetables and beans on one half of the tortilla. Cover this with another 1/8 cup cheese. Fold the empty half over the tortilla and let the cheese begin to melt.

3. Use a spatula to gently turn the quesadilla over, using the crease of the tortilla as a pivot point in the pan. Cook for another 2 minutes or until cheese is melted through. Cool and serve with salsa and sour cream.

Note: Want to have a fun, healthy kids snack that you can keep on hand? These quesadillas will store well if separated by a paper towel to protect the crunchiness-- them makes them easy to be found by kids for simple snacking later.
