Savory Tex-Mex Appetizer Cheesecake Recipe

Tasty savory tex mex cheesecake recipeThis cream cheese salsa dip is a little more work-intensive than your average cream cheese appetizer recipe... but every mouthful will remind you of why it's totally worth it. Baking this like a cheesecake makes it a bit firmer than raw cream cheese, but with a creamy, melt-in-your-mouth texture that you can only get with cheesecake.

This is also a good make-ahead party appetizer, as it needs to sit in the refrigerator overnight before removing it from the pan. Then just garnish, set it out, and watch your guests moan and groan over its deliciousness.

Serves about 20.

Tortilla Crust:
1 1/4 C. ground-up tortilla chips
1/4 C. butter, melted

Cheesecake Layer:
2 bricks (8 oz. each) cream cheese, at room temperature
1 C. sour cream
1 envelope taco seasoning
1/2 C. salsa (red or green)
2 eggs, lightly beaten
1 C. shredded Monterey Jack cheese
1/2 C. pepperjack cheese, shredded
1/2 C. shredded sharp cheddar cheese
1 (4 ounce) can green chilies, drained and chopped
2 Tbsp cilantro, chopped

Taco Topping:
1 cup sour cream
1/3 cup sliced black olives
3 scallions, chopped
1 small tomato, seeded and chopped
1 jalapeno pepper, sliced thinly

Instructions: 1. Preheat oven to 325 degrees F.

2. In a mixing bowl, combine your ground-up tortilla chips and butter. Press mixture into a 9-inch springform pan (bottom only-- just as you would a traditional cheesecake).

3. Bake tortilla crust 10-12 minutes. Cool slightly.

4. Preheat oven to 350 degrees F.

5. In a large mixing bowl, beat cream cheese and sour cream until smooth with electric mixer. Add taco seasoning and salsa; mix until well blended.

6. Beat in the eggs. Stir in the cheeses, chilies, and cilantro. Pour carefully over crust.

7. Place on baking sheet and bake for 30 to 35 minutes, or until mostly set, with firm edges and a slightly soft middle.

8. Cool for 10 minutes on wire rack. Loosen from pan by carefully running a knife around the edge and cool an additional 60 minutes.

9. Place in refrigerator overnight before trying to remove it from the pan.

10. Remove sides of pan and "frost" entire cheesecake with sour cream.

11. Garnish decoratively with olives, onions, tomatoes and jalapeno slices. Serve with assorted crackers, veggie dippers, and tortilla chips.

Creamy-Cheesy Salami-Chive Roll-Ups

This is one of the easiest cream cheese appetizer recipes you'll ever make! But it's also one of the appetizers bound to be most popular on your party food table. Why? Because something about the combination of smooth, creamy cream cheese and chewy-salty salami is just wonderful... especially with the fresh spiciness of chive.

32 thinly sliced dry hard salami
1 (8 oz) pkg cream cheese
1 bunch chives, cut in 3" lengths

Instructions: 1. Spread each salami slice with a thin layer of cream cheese, about 1 teaspoon.

2. Lay 3-4 pieces of chive across the center of each salami slice, roll up and secure with toothpick.

3. Cover and refrigerate until ready to serve your cream cheese appetizer recipe.

24 medium jalapeno peppers, halved lengthwise and seeded
1 (8 ounce) package cream cheese, softened
2 cups cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1 tsp. Worcestershire sauce
6 strips bacon, cooked and crumbled

Instructions: 1. In a large pot, bring salted water to a boil. Add jalapeno halves and boil for 5 minutes. Drain well.

2. In a mixing bowl, combine cheeses and Worcestershire sauce; stir well.

3. Fill each jalapeno half with one heaping teaspoon of the cheese mixture. Sprinkle each with bacon and place on a baking sheet.

4. Bake in preheated 400-degree oven for 5 minutes, or until cheese has melted.
