Rustic Bacon and Scallion Cold Shrimp Salad
This traditional and simple recipe for shrimp salad has all of the necessary elements for a great dish. And a touch of bacon on top gives it just a bit of rustic smokiness that's really divine.
For a make ahead shrimp salad, do the shrimp salad mix ahead of time, and put it all together right before serving.
2 cups cooked shrimp, cut in half lengthwise and chilled
1 cup celery, thinly sliced
4 scallions, finely chopped
1 tablespoon lemon juice
1/2 cup mayonnaise
Salt and pepper, to taste
Romaine or mixed green lettuce
2 roma tomatoes, thinly sliced
6 slices of bacon, cooked crisp and crumbled
Directions: In a large mixing bowl combine celery, scallions, lemon juice, mayonnaise and salt and pepper. Gently fold the shrimp into the bowl and evenly coat everything.
Place lettuce in a plate or bowl and place a scoop of shrimp salad in the middle.
Place tomatoes on top or in a circle around the shrimp and garnish with bacon crumbles.
