Cajun Spiced Shrimp in Chardonnay Butter
This spicy shrimp appetizer recipe is one to beat them all. The rich tang of the Chardonnay butter sauce adds a cool rich creaminess to the spicy (and well-spiced) shrimp. Want to add a little body to the sauce? Toss in a couple of tablespoons of heavy cream when you take it off the heat.
Serve this spicy shrimp appetizer in individual ramekins for a sit-down appetizer, or place in a heated dish and let guests serve themselves with toothpicks, Spanish tapas style!
2 lbs raw shrimp, shelled and deveined
1/2 stick butter
2 cloves garlic, crushed and minced
2 tbsp shallots, minced
1/2 tsp dried oregano
1/2 tsp dried basil
1 tsp dried thyme
1 tsp white pepper
1 tsp freshly ground cayenne pepper
1/2 tsp crushed red pepper flakes
1/2 cup dry Chardonnay wine
Instructions: 1. In a small bowl, mix together the oregano, basil, thyme, pepper, cayenne, and pepper flakes.
2. In a large pan, melt butter over medium heat. Add garlic, shallots, and herb mix, and sauté until garlic just begins to brown, 3-4 minutes
3. Add shrimp and sauté about 3 minutes, until shrimp begin to turn pink. Add wine and simmer until shrimp are cooked through, about 2 minutes.
4. Serve immediately.
Serving Note: Want to make this spicy shrimp appetizer into a main dish? It can be served over rice if desired. Or place a small amount of rice in the bottom of a shot glass and scoop a shrimp and a bit of sauce over for a fun and pretty appetizer.
