Cheese Covered Olives Recipe
This fun finger food for parties has a surprise! When you bite in, you'll find a tangy olive inside, surrounded by a layer of flavorful crisp cheese.
Cheese and olives are a great pairing, but this twist makes them easy to grab. Remember the greatest finger foods for parties are always a little unique. For a twist you can add a tiny amount of cayenne to the dough or use olives stuffed with garlic or jalapenos... play around with the flavors!
1 cup flour
4 tablespoons butter, room temperature
2 cups sharp cheese, finely grated
Large jar pimento stuffed olives
Directions: 1. Preheat oven to 400?F. Place olives in a colander and set aside.
2. Place cheese and butter in a food processor and pulse until combined. Put mixture in a bowl and add flour until mixed. If the dough is too dry, add a tablespoon of ice water.
3. Roll the dough into a thin sheet about 1/4" thick. Cut 2 inch squares or circles and wrap each around an olive and seal together by pinching.
4. Bake cheese olives on a cookie sheet at 400 degrees F for 10-15 minutes or until the outside is lightly brown.
