Feta-Spinach Party Puffs Recipe
This puff pastry appetizer recipe is inspired by Spanakopita, a Greek layered pastry with spinach and feta cheese. It's just as bursting with flavor, but a lot simpler to make and a ton of fun to eat. This is a good vegetarian puff pastry recipe if you want to have a vegetarian option available at your party. The Mediterranean flavors are to die for!
1 sheet puff pastry, thawed
2 teaspoons olive oil
1 small onion, chopped
3-4 cloves garlic, minced
10 ounces chopped frozen spinach, thawed and WELL drained
4 ounces crumbled feta cheese
1/8 teaspoon nutmeg
1/4 teaspoon ground black pepper
Directions: 1. Preheat oven to 400°F.
2. Heat the oil and sauté onion and garlic until tender. Add spinach and nutmeg, cook for 3 minutes. Remove from heat and stir in feta cheese and pepper.
3. Gently unfold the pastry sheet on a lightly floured surface. Roll the sheet to a 12 inch square. Cut 3 inch squares and brush the edges with water.
4. Place a teaspoon of mixture into the center of each square and seal edges by pressing. Place pastries on baking sheet and bake for 15 minutes or until brown. Remove this puff pastry appetizer recipe to a cooling rack for 10 minutes.
