Spinach Artichoke Appetizer Dip Recipe for the Crockpot

If the usual meatballs aren't your thing, how about something completely different? I don't know anybody who doesn't like a spinach artichoke dip, like this one served with pita chips or toasted baguettes.

This easy spinach dip recipe has just a few simple ingredients, comes together in no time, and tastes like a lot more work than it really is.

Serves about 10-12 people.

Ingredients:
1 c. salad dressing or mayo (you can use low fat)
1 c. Parmesan cheese freshly grated
1 - 14 oz. can artichoke hearts (drained & coarsely chopped)
1 - 10 oz. packaged frozen chopped spinach (drained thoroughly)
1/2 c. chopped sweet bell pepper
1/4 c. shredded cheese (mozzarella is nice)
Assorted crackers, baguettes, or pita chips

Directions:

There's a long party ahead so treat your slow cooker with some cooking spray to keep it from sticking. You'll need minimally a 2 quart cooker for this dish. Mix all your ingredients gently together then transfer them into the slow cooker. It will take about one hour on low heat for the blend to melt and mix nicely. Once done, it stands up for about three hours of staying heated (if it lasts that long!).
