Curried Chicken Finger Sandwich Recipe

Finger sandwiches enjoy a rich history that includes many regions of the world. And since this type of food is so quintessentially English, and England has such a close relationship to India, a curried filling for finger sandwiches really reflects this! This savory little chicken salad brings together the sweet taste of pineapple with the flavor of curry. Really flavorful and special!

2 small cans chunk chicken
1 small can pineapple, drained and chopped
1/2 cup celery, chopped
1/2 cup pecans, chopped
1/2 cup mayonnaise
1/2 medium onion, chopped
1/2 teaspoon curry powder
Salt and white pepper to taste
3/4 cup butter, softened
20 bread slices

Directions: 1. Drain chicken and combine with celery, pecans, pineapple and onion in a medium bowl.

2. In a separate bowl mix the mayonnaise and curry. Add to chicken mixture and stir thoroughly.

3. Coat one side of bread slices with butter. Spread chicken mixture on half the slices and top with the remaining slices. Remove crusts and cut as desired.
