Deadly Chipotle Lime Shrimp Appetizer Recipe
Now, when you want a spicy shrimp appetizer with true
flavor, you want to opt for a chipotle shrimp recipe every time. While the chipotle adds a lot of heat to the dish, it also
adds a ton of deep smoky, tangy, wonderful flavor.
This Mexican shrimp appetizer recipe is tangy-spicy-smokey with a wonderful tomato-based sauce. Serve it with rice for a main dish (or as a mini-dish appetizer), on individual plates with a slice of tortilla, or in a large communal dish with plenty of bread for dipping.
1 1/2 lbs large shrimp, peeled, with tails left on, deveined
1 lime, juiced
3 tbsp extra virgin olive oil
1 cup white onion, chopped
1 (14 oz) can Mexican style diced tomatoes
3 chipotle chiles in adobe sauce
4 cloves garlic, crushed and chopped
1 tsp dried oregano (Mexican if available)
1/2 cup dry white wine
Salt and pepper to taste
Instructions: 1. In a large bowl, combine shrimp and lime juice. Toss to coat and refrigerate no longer than 20 minutes.
2. Heat 2 Tbsp olive oil in a large pan over medium heat. Add shrimp and onion, and sauté 2 minutes. Transfer shrimp and onions to a bowl and set aside.
3. In a blender or food processor, combine tomatoes, chiles with sauce, garlic and oregano. Blend until smooth.
4. Add the remaining tbsp olive oil to pan and reheat. Add tomato/chile mixture and simmer over medium heat for 8 minute, stirring constantly. Add wine, reserved lime juice, and shrimp. Cook another 2-3 minutes. Don't overcook the shrimp!
5. Serve hot.
