Flavorful 4th of July Ginger-Molasses Skewers

Now that finger food is out of the way, let's look to the grill! Skewered food is fantastic at picnics because you can "take it with you"-- you don't even need a plate to eat it. Here's one recipe for 4th of July appetizers that can be used for beef, chicken, or vegetables (or a combo of all three!) equally easily.

Serves about 10, 3 skewers or so each.

1/2 cup soy sauce
1/4 cup extra virgin olive oil
1/4 cup stock (vegetable or beef)
2 tablespoons molasses
2 teaspoons mustard powder
1 teaspoon freshly ground ginger
2-3 cloves fresh minced garlic
1/2 teaspoon minced onion (or onion powder)
2 lbs. fresh vegetables, chicken breast, or steak, cut into
32 wooden skewers soaked in white wine


Put all your marinade ingredients into a large bowl for which you have a secure lid. Add the meat or vegetables (or both if you wish). Cover and move this into the refrigerator, shaking regularly. Marinate for 8-10 hours for the richest flavor.

Next, transfer the meat and/or vegetables onto your skewers. Heat up the grill to medium high, oiling the grates so your skewers don't stick. Cook on each side for about four minutes, or until done to your liking. Serve on a pretty bed of lettuce (with a pile of napkins or small paper plates ready!).
