Grilled Fruit with Lime, Honey, and Mint Yogurt Dip
Try this wonderful fruit dip (made with yogurt, of course!) with grilled fruit, like grilled pineapple, plum, and peach (recipe below). Don't have the time or feel like grilling fruit? Any rich and flavorful fruit will be wonderful with this tangy, refreshing summer fruit dip, such as bananas or ripe peaches.
1 1/2 c. plain yogurt
3 tbsp. honey
2 tbsp. freshly squeezed lime juice
3 tbsp. fresh mint, minced
Plum, peach, and pineapple wedges
Skewers soaked in white wine
Directions: 1. Mix together the yogurt, honey, lime juice, and mint. Put in the refrigerator to chill until the fruit is off the grill.
2. Mix different pieces of fruit on your skewers, and grill them over a medium-hot flame for about 2 minutes on each side. Note that your grate should be oiled. You can drizzle a little honey on the fruit at the last turn for more sweetness, if desired.
