Miniature BLT Bites: a Perfect Finger Food

Summertime can come in a bite if you make these tiny bacon, lettuce and tomato treats. Without the bread, these are low in carbohydrates and fresh from the garden tasting. One of my favorite easy finger foods for parties-- they just fly off the trays.

Ingredients:
16 ounces cherry tomatoes
1/2 cup mayonnaise
4 green onions, chopped
1 1/2 tablespoon fresh parsley, chopped
1 pound bacon, cooked crisp and crumbled
Salt and fresh cracked pepper, to taste
1 small head bib lettuce

Directions: 1. Combine mayonnaise, green onions, pepper and parsley in a bowl.

2. Remove a small slice from the top of each tomato and scoop out the insides with a small grapefruit spoon or melon baller. Keep the shelled tomatoes and discard the middles.

3. Lightly salt each tomato inside and fill with the bacon mixture. Refrigerate for a minimum of one hour and then serve on a bed of the lettuce. For a full featured sandwich guests can grab the tiny lettuce around the tomato bites.
