Cold Seafood Finger Sandwich Recipe
Great restaurants offer cold seafood salads to delight customers and suggest an expensive menu. This seafood salad finger sandwich recipe does the same thing... but in miniature! The tart lemon juice and hot sauce are just enough acidity to accent the rich, buttery flavor of the seafood.
3/4 cup cream cheese or butter, softened
2 tablespoons fresh chives, finely chopped
2 cups mixed shellfish (crab, shrimp, lobster), cooked, peeled, finely chopped
1/2 cup mayonnaise
1 dash of hot sauce
1 tablespoon lemon juice
Salt and pepper, to taste
Directions: 1. Combine cream cheese and chives in a small bowl. Spread one side of each slice of bread with a thin layer of cream cheese mixture.
2. In a separate bowl combine the seafood, mayonnaise, hot sauce and lemon juice. Season to taste.
3. Spread seafood mixture on half of bread slices and top with remaining bread. Remove crusts and cut into desired shapes.
