Silly Scream Cone: Nutritious Yogurt Fruit Salad

Fruit, nuts and a few vegetables might make this snack sound uninteresting, but not when it is served with flavored yogurt in an ice cream cone or waffle bowl. Kids will enjoy licking and crunching on this texture-rich and portable snack. You will enjoy knowing they are getting vitamins, protein and fiber with their twisted "ice cream."

This fun, healthy kids snack can also be make ahead of time. Once the fruit salad is done, you can store it in the refrigerator. It is ready to be put into its cone whenever your kiddo is ready to eat.

Serves 4.

Ingredients:
1 cup red or green apple, chopped with skin left on
1 cup seedless red grapes, cut in half
1/2 cup carrot, finely grated
1 cup celery, finely chopped
1/2 cup raisins or dried cranberries (craisins)
3 tablespoons vanilla yogurt
1 teaspoon lemon juice
1/4 C. chopped nuts
4 ice cream cones or bowls

Directions: 1. Combine fruits and vegetables in a bowl. Toss lightly with yogurt and lemon juice. Stir in nuts.

2. Chill fruit salad for 20 minutes and then scoop into cones or bowls to serve.
