Simple Stuffed Mushrooms with Sherry
When searching for recipes for quick and easy party appetizers that are also impressive, here's a trick: Sometimes the addition of just one unusual ingredient can elevate a standard dish to something memorable.
In this case, standard stuffed mushrooms are made unusual and elegant with the addition of a nice-quality sherry. You can mix up and assemble the mushrooms ahead of time to turn these into really easy to make appetizers for your party. Just bake them up right before serving so they stay warm.
Serves about 6.
1 1/2 pounds medium mushrooms, whole
3 tablespoons butter
1/3 cup shallots, finely chopped
3 garlic cloves, minced
1 tablespoon fresh parsley, chopped
1/3 cup sherry
1 1/2 cups Italian seasoned breadcrumbs
1/2 cup freshly shredded Parmesan cheese
Directions: 1. Preheat oven to 350 degrees F.
2. Clean mushrooms and remove stems. Remove the cut end and finely chop the stems.
3. In a heavy sauté pan, melt the butter over medium heat. Sauté the chopped stems, garlic and shallots until tender.
4. Remove from heat and add sherry, breadcrumbs and parmesan until well combined.
5. Spoon a small amount of mixture into each mushroom cap and place in a lightly oiled baking pan. Bake 10-15 minutes and serve warm.
Serving Suggestion: Mushrooms make wonderfully quick and easy party appetizers, and will be easiest for guests to grab and eat if you skewer them from the side-- this way, all they have to do is grab and go.
