1. Buying and Prepping Fresh or Frozen Shrimp. Always begin your salad with shrimp that are thawed, deveined and free of shells, heads or tails. Some frozen shrimp are already packaged this way and will make your preparation much easier.

Keep in mind, though, that pre-peeled and deveined shrimp lose something in flavor and texture, so it's best to do it yourself if you have time. And never use pre-cooked frozen shrimp! It's fishy-smelling and -tasting, and the texture is, well... gross.

2. Cooking the Shrimp. For any recipe for shrimp salad, you should cook shrimp in rapidly boiling salted water for three to four minutes, depending on the size of the shrimp. Don't wait for the water to start boiling again to start timing... start counting down right away. And err on the side of too little. You can always cook an undercooked shrimp more... but nothing fixes an overcooked one.

3. Giving 'Em an Ice Bath. Once your shrimp are opaque all the way through you should immediately remove the shrimp and place them in an ice water bath until cool. The ice water bath will stop the cooking process and prevent overcooked shrimp. The texture of shrimp changes as it gets cooked too much and makes an unappealing shrimp salad.

2 pounds small shrimp, cleaned and cooked
5 green onions, minced
1/4 cup cilantro, chopped fine
1/4 cup celery, chopped fine
1/2 cup mayonnaise
1/3 cup heavy cream
2 tablespoons fresh lime juice
1 tablespoon white sugar
1 tablespoon whole grain mustard
2 teaspoons hot sauce (like Tabasco)
1/2 teaspoon cayenne
Salt and white pepper, to taste
12 small pastry appetizer shells, pre-cooked and cooled

Directions: In a large bowl, toss together the shrimp, celery, green onions and cilantro.

In a small bowl, whisk to combine mayonnaise, cream, lime juice, sugar, mustard, hot sauce and cayenne. Use salt and white pepper to adjust seasoning.

Pour dressing over shrimp and toss gently until coated. Chill for 1 hour.

Fill pastry shells with shrimp salad, and serve immediately.

Rustic Bacon and Scallion Cold Shrimp Salad

This traditional and simple recipe for shrimp salad has all of the necessary elements for a great dish. And a touch of bacon on top gives it just a bit of rustic smokiness that's really divine.

2 cups cooked shrimp, cut in half lengthwise and chilled
1 cup celery, thinly sliced
4 scallions, finely chopped
1 tablespoon lemon juice
1/2 cup mayonnaise
Salt and pepper, to taste
Romaine or mixed green lettuce
2 roma tomatoes, thinly sliced
6 slices of bacon, cooked crisp and crumbled

Directions: In a large mixing bowl combine celery, scallions, lemon juice, mayonnaise and salt and pepper. Gently fold the shrimp into the bowl and evenly coat everything.

Place lettuce in a plate or bowl and place a scoop of shrimp salad in the middle.

3 tablespoons white wine vinegar
1 clove of garlic, minced
1 teaspoon fresh parsley, chopped
1 teaspoon white sugar
1 1/2 teaspoons orange peel, grated
3 tablespoons olive oil
2 navel oranges
1 pound cleaned and cooked shrimp
5 cups each Bibb lettuce and iceberg lettuce, chopped
2 scallions, sliced

Directions: In a large bowl, use a whisk to combine the vinegar, garlic, parsley, sugar and orange peel. Slowly drizzle in olive oil and continue whisking to form the vinaigrette.

Peel the oranges and cut the sections of fruit away from the dividers. Chop oranges into small bites.

Toss the shrimp and oranges into the vinaigrette to coat. Cover and set aside to chill for 1 hour. Toss shrimp and orange salad with lettuces and scallions.
